A swing lever cheese press that fits into a 6 x 6 x 24 inch box.

The lever arm has 2 notches on the top, one to fit into the bolt on the swing and the other to hold the weight hanging on the lever arm. It also has 2 notches on the bottom, one for high weight pressing( MA=12) and the other for low weight pressing ( MA=6).
The plunger also has 2 positions, one for low weights and one for high weights.
HIGH POSITION LOW POSITION
To find any pressing weight, multiply the weight on the lever arm times the mechanical advantage ( MA ). PRESSING WEIGHT = LEVER ARM WEIGHT x MA
For example; 8 lbs hung on the lever arm and using the high position( MA=12) would give you 8 x 12 or 96 LBS pressing on the cheese in the mold. Since 1 gallon of water weighs about 8 lbs, then hanging 1 gallon of water gives you about 96 lbs pressing weight. To find any pressing weight, you can use the calculator on this site. Just enter the MA ( 12 or 6) in the first section of the calculator, then your mold diameter in the next section, then enter the pressing weight you want and the calculator gives you the amount of weight ( or amount of water ) to hang on the lever arm.
